Asian Barbecue Fish Sauce WIngs

3 lbs chicken wings1/2 cup fish sauce1/2 cup sugar16 cloves garlic (10 smashed, 6 minced)2 tbls canola oil1 tsp red pepper flakes (or to taste)1 bunch cilantro, minced1 bunch fresh mint, minced
Mix fish sauce, sugar and smashed garlic cloves in large stainless or glass bowl. Add wings and toss to coat. Marinate for three hours, stirring regularly.
Strain marinate into pot with red pepper flakes. Bring to boil and hold for five minutes. *Reduce heat and simmer until thick and syrupy.
Saute minced garlic in canola oil until golden (don't burn!). Set aside.
Barbecue wings until golden and cooked through. Pour reduced sauce over wings and sprinkle with herbs and toasted garlic. Serve warm with rice and lots of napkins!
Serving Size: Makes about thirty wings (recipe calculated as six servings, 5 wings each)
