My Vegetable beef soup

Ingredients
1 bell pepper1 medium onion2 stalks celery2-3 carrots1 can diced tomatoes1 can red kidney beans1 boil a bag brown rice1 lbs lean grown beef1 tsp minced garlic1 tbs olive oil2 beef bullion cubes
Directions
Chop vegetables and add to soup pot with 1 tbsp olive oil, add minced garlic and saute til onions are translucent
Add tomatoes
2 beef boullion cubes
8 cups water

Simmer for 30-45 minutes

Add kidney beans and rice

brown ground beef, drain and rinse with warm water to remove fat. Add to soup pot and continue to simmer on low for 45 minutes. Add extra water if needed. Makes 10.....1.5 cup servings.
