Tuna Albondigas

2 - 12 oz. can of tuna (packed in water)2 egg whites1/4 cup whole wheat flower1/4 cup chopped green onionsgarlic powderpeppersaltdiced tomatoes1/4 cup chopped yellow/white onionstbsp chicken boullion
In a bowl beat egg whites till they thicken, mix in tuna, finely chopped green onions, garlic powder, black pepper and 1/8 cup of flour. Shape tuna mixture into 8 small round patties. Heat a pan with olive oil or cooking spray - cook (fry) patties browning evenly on both sides till crispy on the outside.
To make sauce that goes over the tuna patties:
Heat another pan and add saute diced tomatoes and onions, garlic powder, salt, pepper and a small amount of chicken boullion - (to taste). Add water (as needed) and a small amount of flour to thicken sauce a little.
Serve tuna patties and sauce over them with a side of brown rice and a side of one of your favorite vegetables.
I suggest asparagus or green beans.
