1 tbsp olive oil 6 cloves garlic, minced1 1/2 lbs grape tomatoes, halvedsalt and fresh pepper 2 tbsp fresh chopped oregano (or fresh basil) 1/8 tsp red crushed pepper flakes
1. In a large non-stick pan, heat oil over medium-high heat. Add garlic and cook until fragrant, about 3 - 4 minutes.
2. Add tomatoes, salt, crushed red pepper flakes and fresh black pepper and reduce heat to low. Simmer, covered for 15 minutes. Add fresh oregano and cook another 15 minutes.
Serving Size: Makes 2 1/2 cups
