Crock Pot Chicken Cacciatore

8 chicken thighs, with the bone, skin removed 28 oz can crushed tomatoes1 red bell pepper, sliced into strips 1 green bell pepper, sliced into strips 1 large onion, sliced 1 tsp dried oregano 1 bay leaf salt and fresh pepper to taste
1. Season chicken with black pepper and place in the slow cooker.
2. Add tomatoes, onions, peppers, oregano, bay leaf and pepper. Mix well and cover.
3. Cook on LOW 8 hours. Set crock pot to LOW 8 hours. Remove lid and switch heat setting to HIGH and let cook an addition hour to thicken sauce.
Serving Size: Makes 6 servings

The photo shows mushrooms in the sauce, which are not in the ingredients. I served this for a special luncheon today, over bowtie pasta. It was a big hit! I added two minced garlic cloves. Since time was limited, I baked the chicken, adding the sauce half way through. Use a BIG baking dish! - 12/30/16
