Curry Quinoa with Black Beans

3 TBLS Coconut oil2 Large Carrots - diced1 Small Onion - diced2 Celery Stalks - diced4 garlic cloves - minced1 15 oz Can Black Beans - drained and rinsed1 Cup uncooked Quinoa2 Cups Chicken/Vegetable Broth - (Water can be used instead.)3 TBLS Curry Powder2 TBLS Turmeric2 TSP Sea Salt1 TSP ground white pepper (Black Pepper can be substituted)
In large skillet or sauce pan sautee Carrots, Onion, Celery, and Garlic in Coconut oil.
Once tender add Black Beans, Chicken Stock, and Seasonings.
Bring to a boil. Add Quinoa. Cover and cook an additional 15 minutes on low heat.
Fluff with a fork and serve.
Serving Size: makes 6 1-cup servings
