Crock-Pot Chow Mein

Ingredients

1 pound skinless boneless chicken breast, cubed1 1/2 cups chopped celery1 1/2 cups chopped carrots6 scallions, chopped1 cup vegetable broth1/3 cup soy sauce1/4 tsp. red pepper flakes1/2 tsp. ground ginger1 can bean sprouts, drained1 8-oz. can sliced water chestnuts1/4 cup cornstarch1/3 cup water
Combine all the ingredients, except the cornstarch and water, in the crock pot. Cover and cook on low for 6 to 8 hours.
In a small bowl, mix the cornstarch and water until smooth. Stir into the slow cooker. Cook, leaving the lid askew to allow steam to escape, for 20 minutes, or until thickened.
Serve with rice.
