Twice Baked Sweet Potatoes

2 Large Sweet Potatoes1/4 cup crumbled Feta cheese6 Green kalamata olives1/4 cup heavy cream
Preheat the oven to 425. Bake sweet potatoes for about 45 minutes until cook so knife inserts easily. Remove from the oven and cool until easy to handle.
Scoop out the flesh being careful not to rip the skin. Mash the potatoes and then fold in the olives and half of the feta cheese. Whip in the heavy cream. Refill the shells with the mixture and top with remaining feta.
Heat in a 400 degree oven until cheese is melted and potatoes are warmed through, about 30 to 40 minutes.
Serving Size: Makes 4 servings, 1/2 potato each
