2/3 cup coconut flour1/2 tsp salt1/2 tsp baking powder8 eggs1/2 cup butter(or substitute with a mix of coconut butter and olive oil)
Preheat the oven to 200 degrees. Combine coconut flour, salt, and baking powder. In a separate bowl, beat the eggs, slowly whisking in the melted butter. Add the coconut flour mixture to the egg/butter mixture and stir to combine. Batter will yield enough for 12 greased muffin. Bake for 25 minutes or until golden browned. Take out of oven and let cool.
