Cheesy Zucchini Quinoa Patties

Ingredients
1 cup dry quinoa (any color)2 cups shredded zucchini3/4 cup shredded cheddar cheese1/4 cup nutritional yeastsalt & pepper to tasteseveral generous shakes of your favorite seasoning - I like Mrs. Dash Southwest Seasoning
Directions
Bring the quinoa and broth to a boil over medium heat, reduce the heat and simmer covered until the broth has been absorbed and the quinoa is tender,about 15-20 minutes. (Or use a rice cooker)

Remove from heat am mix in the zucchini, cheese, salt & pepper and seasoning.

Form into 6 equal patties. Spray a pan with a little oil and cook each side of the patty for 6-7 minutes.

Serve immediately.
