Baked Oatmeal with Fruit

2 cups dry rolled oats NOT instant1/3 cup brown sugar1/2 cup chopped toasted pecans or walnuts1 t baking powder1 t cinnamon1/2 t salt2 cups 1% milk1 large egg2 T unsalted butter, melted1 T vanilla2 ripe bananas, sliced1 1/2 cups fresh or frozen blueberries or other berries
Butter a eight in baking dish. Preheat oven to 350.
Mix first six ingredients (through salt) together. In another bowl whisk together milk, egg, butter and vanilla.
Arrange banana slices on a single layer in prepared pan. Sprinkle with a 1/2 cup of blueberries. Cover fruit with oat mixture. Slowly pour milk mixture over oats tapping dish to make sure the milk mixes with the oats. Scatter remaining berries on top.
Bake for 35 to 45 minutes or until set and golden brown. Serve plain or with a bit of additional milk and/or sugar. This is also good cold!
