Curried Yellow Split Pea Soup

Ingredients
1 TBS olive oil1 onion, chopped1 carrot, chopped4 cloves garlic, minced4 cups vegetable stock or broth4 cups water1 cup dried yellow or green split peas1 tsp curry powder1 tsp ground cuminparsley to garnish optional
Directions
Makes 8 - 1 cup servings
Heat oil in large pot over med high heat. Add onion, and cook 5 minutes, stirring occasionally. Add carrot and garlic and cook until soft, about 5 minutes. Add remaining ingredients and bring to a boil. Reduce heat and simmer uncovered 30 minutes or until peas are tender.
