Malaysian Curry Chicken in Coconut Milk

Ingredients
1 lb. potatoes, cooked, peeled, and cut into chunks2 T extra virgin olive oil1.5 c chopped onion3 cloves chopped garlic12 oz. boneless, skinless chicken breasts, cut into chunks1 T each: ground cumin, paprika, curry powder, chili powder1 c chopped cilantro1 bay leaf1 c coconut milk2 c watersalt & pepper to taste
Directions
Cook potatoes and set aside.
Heat oil and fry onions and garlic for one minute.
Add chicken and cook for three minutes.
Add spices and mix together.
Cook ten minutes.
Stir in remaining ingredients and simmer to reduce liquid.
Remove bay leaf!
