Roasted Sweet potatoes

Ingredients
1 cup sweet potatoes, peeled & cubed1 tsp olive oil1/2 tsp kosher salt1 tsp black pepper, fresh cracked
Directions
Put all ingredients into a gallon zip lock bag and massage until well coated. Pour into a lightly greased 9 x 13 pan. Place pan in a 400 degree oven. Stir half way through baking. Bake until tender.
Makes 2 1/2-cup servings.
