Tomato-Curry Lentil Stew

Ingredients
1 cup dry lentils1 cup water1.5 cup chopped tomatoes (or stewed)0.25 cup chopped onion4 stalks celery, chopped0.5 tsp curry powder6 cloves garlic, mincedsalt and ground black pepper to taste
Directions
Combine lentils and water, and bring to a boil.

Lower heat to a simmer, and add tomatoes, onion, and celery. Cover and let simmer for 45 minutes. Check every 15 minutes to stir, and add water if necessary.

Add spices last 15 minutes to taste.
