Chicken Kebabs with Tangy Apricot Sauce

Ingredients
SAUCE1 1/2 cups canned light Apricots, drained2 tblspn Lime Juice2 tblspn Thai Sweet Chilli Sauce2 tblspn Cilantro (Coriander) choppedKEBABS500 grams Chicken Breast, cubed1 large Red Bell Pepper, cut into squares1 large Green Bell Pepper, cut into squares1 tblspn Olive Oil2 tblspn Lime Juice1 clove Garlic, crushed
Directions
Mix together the Olive Oil, Lime juice and Garlic clove and marinate the chicken for at least 30 minutes.
Meanwhile place the sauce ingredients except the cilantro into a blender and process until smooth, place into a saucepan and cook until heated through.
Thread the chicken and the bell peppers onto skewers and broil (grill) or BBQ until cooked.
Serve with the sauce
