White Rice Muffins

Ingredients
1 Egg1/2 cup Milk2 T Sugar2 T Canola Oil1 C white rice flour2 t baking powder1/2 t salt2 T finely chopped walnuts1/2 C craisins
Directions
Preheat oven to 425 degrees F. Lightly grease a 6 cup muffin tin, set aside. In a mixing bowl, place all ingredients; mix well. Pour into prepared muffin tin. Bake for 17-20 minutes before removing from tin. Yield: 6 large muffins.
