Microwave Lemon Curd (Lemon Cheese)

100ml Lemon juice2 Large fresh eggs110g Sugar60g Spreadable butter or Flora buttery, low salt
Prepare a clean jar and lid by scalding them with boiling water then emptying them.
Beat the eggs and lemon juice together then pass through a fine sieve into a deep microwaveable bowl.
Add the sugar and stir well then add the butter in teaspoonfuls and stir again.
Cover the bowl with clingfilm and microwave at 850-900 watt for one minute. Whisk.
Remove the cover and microwave at 650 watt six times for one minute each, whisking well each time to prevent curdling.
Remove the bowl from the microwave and continue whisking until the mixture cools. The mixture will thicken as it cools.
Serving Size: makes 33 10ml servings
