Vegetarian Quorn Tortilla Wraps (1 serving = 1 wrap with filling)

Ingredients

olive oil (2 tbsp)1 white onion3 medium tomatoes1 small tin of sweet corn (150g)1 packet of quarn Chicken Style Pieces (350g)1 clove garlic (ground)salt (1tsp)ginger (1tbsp)mango chutney (50g = 4 tbsp)basil (1/2 tbsp)yoghurt (100g = 8 tbsp)tortilla wraps (8 of)
Chop all vegetables into small pieces
Heat oil in frying pan at high heat
Microwave quorn for 5 minutes at full power (700W)
Brown diced onion while quorn is cooking
Grind / crush garlic clove in salt
Mix quorn & remaining chopped veg in the frying pan
Add mango chutney, ginger and ground garlic / salt.
Reduce frying pan heat to a medium heat then stir for a few minutes until filling is hot enough to eat
Add basil and stir until mixed evenly
Warm tortilla wraps in microwave for 30 - 40 seconds until sufficiently warm to eat
Serve filling spread across 8 tortilla wraps
Add 1 tbsp yoghurt per wrap
Wrap fajita & enjoy eating!
