Sabudana Kheer (Indian Tapioca Dessert)

1/3 cup tapioca pearls3 cups water9 TBS. coconut milk powder3 TBS. raw honey1 TBS. chopped pistachio nuts1 small pinch of saffron1/4 tsp. cardamom powder3 TBS. raisins
Soak tapioca pearls in 1/3 cup water for two hours. All the water will soak into pearls, making them light and fluffy.
Bring water to a boil and add coconut milk powder, stirring constantly for ten minutes.
Add the pearls and cook until they are translucent, about 4-5 minutes.
Add the remaining ingredients to the boiling mixture, stirring constantly for an additional 2-3 minutes.
Pour into small dishes (I use ramekins). It will become a little thicker as it cools.
Refrigerate for an hour or more and enjoy.
