Fruity Bran Muffins

Ingredients
1/2 cup raisins1 large egg3/4 cup skim milk (buttermilk would also be good)1 1/2 cups bran cereal (not flakes)1 cup whole wheat flour1 teaspoon baking soda1 teaspon ground cinnamon1 tablespoon melted butter1 tablespoon olive oil1 apple cored and shredded (I used medium size)1 ripe banana mashed (again I used medium size)1/4 cup brown rice syrup1/4 cup honey
Directions
Preheat an oven to 400 F. Grease or line 12 muffin cups.

Cover raisins with water in a microwave safe bowl and microwave on high for 1 minute. Drain and set aside.

Beat the egg with milk in bowl, add the bran cereal and mix. Set aside for 5 minuest. Gently mix the remaining ingrediants.

Spoon the batter in the prepared muffin cups (I use an icecream scoop) and bake 20 minutes or until a toothpick inserted into the centre of a muffin comes out clean.
