Gluten Free/Sugar Free Banana Bread

2 cups gluten-free all-purpose baking flour1 teaspoon baking soda1/4 teaspoon salt4 eggs2 tablespoon brewed coffee2 cups mashed ripe bananas (4-5 medium)1/3 cup + 1.5 tablespoon Truvia1/2 cup unsweetened applesauce1/3 cup coconut oil1 teaspoon vanilla extract1 cup chopped walnuts (1/2 reserved)
In a large bowl, combine the flour, baking soda and salt. In a small bowl, whisk the eggs, coffee, bananas, sugar, applesauce, oil and vanilla. Stir into dry ingredients just until moistened. Stir in half the walnuts.
Transfer to one 9.25x5.25 loaf pan coated with cooking spray. Sprinkle with walnuts. Bake at 350° for 55 65 minutes or until a toothpick inserted near the center comes out clean. **Cool for 10 minutes before removing from pans to wire racks.** Yield: 1 loaf (12 slices each).
