Greek Yogurt and Laughing Cow Cheese Eggs

Ingredients
Ingredients: Olive Oil, 0.5 tbsp (remove) Spinach, frozen, 0.3 package (10 oz) yields (remove) Mushrooms, fresh, 1 cup, pieces or slices (remove) *Peppers, sweet, red, fresh, 1 cup, chopped (remove) Onions, raw, 1 cup, chopped (remove) *Laughing Cow Light Creamy Cheese (any variety)(Serving = 1 wedge), 3 serving (remove) Egg, fresh, 4 large (remove) *Cheese, Lite Mexican Blend, Trader Joes, 0.25 cup (remove) *Fage 0% Plain Greek Yogurt, 1 serving (remove)Seasonings to taste 9 (I used salt, pepper, and a Trader joes african smoke seasoning blend)
Directions
Sautee onions and bell peppers.
Add mushrooms and continue to cook.
Add spinach and seasonings. Cook through.

In a blender or food processor mix egg, yogurt and laughing cow cheese. Add to skillet.

Once eggs are cooked thoroughly, turn off stove and remove from burner if electric. sprinkle cheese on top and cover with lid until cheese is melted.
