Salsa with Corn and Black Beans

Ingredients
4 medium tomatoes, diced1/2 white onion, chopped1/2 cup fresh cilantro, chopped2 cloves garlic, minced1 ear corn (about 6 oz canned)1 jalapeno, finely chopped1/2 cup cooked black beansjuice of 1/2 lime
Directions
Combine all ingredients. Allow flavors to blend in refrigerator for at least an hour, taste and adjust seasonings.
Makes about 4.5 cups, or 18 1/4 cup servings.

    I liked this salsa. I will make it again. I have never had cilatro before and I found it to have an odd flavor, so I will not put so much in next time. My husband liked it also. We used it as a side dish with porkchops. It was light and fresh. This is a keeper. - 3/22/07

    I leave out the jalapeno, because I'm allergic to pepper. However even without the jalapeno, this is an excellant Salsa. It's so fresh tasting and goes well with everything! Enjoy! - 3/1/13
