1 Cup Sugar1 TBS Vanilla ExtractDash Salt1 Can Full Fat Coconut Milk
Melt the sugar over med-low heat. This can take a while depending on your pan. Stir occasionally as it melts. Take care to not over stir though. As it's melting, add the vanilla and salt into the coconut milk. When the sugar is melted stir the coconut milk mixture into the sugar. It will bubble and steam violently, it might even seize up. Just turn your heat a little lower and keep stirring. The hardened caramel will dissolve into the milk, just keep stirring. When it's all dissolved (or mostly, sometimes I'll take out the last few small chunks as a treat), pour it into a jar. It will thicken as it cools.
