Muffy's Favorite Tuna Salad (w/vinegar)

12 oz tuna package1 can great white beansbaby carrotsbell pepperjalopeno pepper or other hot peppercelerypurple onionbalsamic vinegarfresh parsley (or basil)
This is a modification of a recipe I found on the net for Italian Tuna Salad. Not sure why they called it Italian, though. Every Sunday, I make this up for my week's lunches, and before I lost her, my cat Muffy would hear me making it and run into the kitchen to get her share.
Drain and rinse off the beans, making sure that any loose husks are washed away.
Chop vegetables into desired size and put in mixing bowl. Cut parsley into small pieces and add to vegetables. Add beans.
Open and drain tuna fish (don't forget to give a little bit to your cat!), then add to vegetable and bean mixture. Add your 3 tbsp of vinegar and mix thoroughly.
Makes 5-6 one cup servings.
