Turkey Sausage, White Bean and Kale Soup

Ingredients
500 g turkey Italian Sausage (I use Lilydale Tailgate)1 tsp olive oil1/2 c chopped onion6 cloves minced garlic8 c. chicken broth4 c. white beans (rinsed and drained)1 bunch of kale, stems removed and chopped (125 g)1 tsp dried rosemarysalt and pepper
Directions
Preheat heavy bottomed stock pot.
Remove sausage from casings and brown
Add 1 tsp olive oil
Add onions - cook 2 minutes, or until starting to brown a bit
Add garlic - cook 2 minutes
Add chicken stock and stir to deglaze pan
Add beans. Bring to a boil and simmer for 10 minutes
Add chopped kale and dried rosemary - simmer until Kale is tender (approx 10 minutes)
Add salt and pepper to taste
