fillet the fish, season w/ salt and pepper. then lightly flour. store in refrigerated area.
sautee mushrooms, shallots, spinach and tomatoes.
fry fillets of fish, then garnish. sauteed sucatash should be plated before the fish. garnish with lemon juice and butter
