Cheese Tortellini with Broccoli and Sun-Dried Tomatoes

Ingredients
1 (10-ounce) bag frozen broccoli1 (16-ounce) package cheese tortellini1/2 cup low-sodium chicken broth 1 teaspoon Italian herbs1/2 cup chopped sun-dried tomatoes (not packed in oil)1 tablespoon unsalted butter1/4 cup shredded Italian-blend cheese
Directions
Prepare the broccoli according to package directions.
Meanwhile, bring a medium pot of water to a boil.
Place the broth in a microwave-safe container. Heat until nearly boiling, about three minutes. Add the herbs and sun-dried tomatoes and allow them to steep.
Add the pasta to the boiling water and cook until al dente, about five minutes.
Drain the pasta and immediately return to the pot. Add the broccoli, broth, herbs, sun-dried tomatoes, and butter. Toss to combine.
Divide among four bowls and top each portion with one tablespoon cheese.
Serving Size: Serves 4 (about two cups)

    This was a super-quick and very tasty meal! I used a frozen, unseasoned broccoli & cauliflower mix instead of the Tuscan seasoned and added my own Italian seasoning. I also used Soy-Free Earth Balance instead of butter and vegetable stock instead of chicken. The hubs loved it. Will make again. - 2/4/13

    I made this with fresh spinach instead of broccoli. Drained the tortellini over the spinach to wilt it, then tossed with the rest of the ingredients. May add some minced garlic next time. Would also be good with crumbled turkey Italian sausage. Very easy and delicious! - 9/18/13

    I cooked onions and garlic with 1 tsp olive oil, added low sodium veg broth (130mgs for 32 oz) and broccoli flowerets when tender, added Tortelini and fresh tomatoes and sodium free butter. It was awesome. - 2/10/13

    Great recipe, have used whole wheat pasta instead of tortellini, added garlic, fresh herbs if have on hand and Tuscan olive oil, for butter. really like sun dried tomato. Found some not in oil that are soft and great in recipes called Fruit Bliss I like alot. great vegetarian meal. - 2/3/21

    Delicious! I substituted roasted red peppers for sundried tomatoes because that's what I had on hand. Also used fresh broccoli, vegetable broth and Earth Balance. The only other change I might make would be to top it off with fresh basil. I have a feeling I'll be making this recipe a lot! - 4/8/14

    I made this with Sun Dried Tomato Bruschetta because I don't like chunks of tomato and it still turned out really well. I added chicken breasts and a 1/4 cup of pasta sauce and I am very pleased with this meal, as was my husband. :) - 4/21/13
