Zucchini and Black Bean Quinoa Skillet

1.5 cups dry quinoa2.5 cups water2 cloves garlic, pressed1 can rotel1 can black beans, drained and rinsed1 zucchinni quartered and sliced1.5 cups cheddar cheese, shredded
Rinse quinoa in a small holed strainer, or put a paper towel down in your strainer so it doesn't escape down the drain.
Bring water and garlic to boil. Stir in quinoa and Rotel. Cover and let simmer on low for 15-20 minutes, or until liquid is absorbed.
Stir in black beans and zucchini and bring up to temperature.
Scoop in to bowls and sprinkle cheese on top.
Serving Size: Makes 4 meal sized servings
