Hearty Lentil Potato Stew

4c. vegetarian vegetable broth1 tbsp. olive oil1c. lentils (any kind)1c. diced carrots1c. diced potatoes1/2c. diced onion2 cloves garlic, smashed1 tsp. cumin1 tsp. salt1/4 tsp. cayenne1/2 tsp. turmeric
Saute onions and garlic in olive oil in a large stew pot (I like a heavy cast iron pot) over medium high heat until onions are soft (about 5 min.). Add carrots and potatoes and stir for a few minutes. Add broth, spices and lentils. Bring to a boil, lower heat to a slow simmer, over and simmer for 30-40 minutes until lentils and potatoes are soft. Optional: blend with a hand blender to make a smooth stew. Optional garnish: I like a dollop of sour cream or vegan Tofutti sour "cream" on top.
