Bean soup with soy chirozo

1 pound white beans, soaked4 medium carrots, sliced6 medium stalks celery, sliced1 medium onion, quartered4 medium tomatoes, peeled and chopped12 oz package Trader Joe's Soy ChorizoSalt and pepper to taste (other spices as you wish)Water to cover ingredients, about 6 cups
1) Follow the instructions for soaking the beans, whether the overnight or the quick soak method. To quick-soak, rinse the beans and cover with six cups of water. Bring to a boil and cook for two minutes. Remove from heat, cover and let stand for one hour.
2) While the beans are soaking, cut the carrots, celery, and onion. Put them into the crock of you large slow cooker.
3)Add in the soy chorizo.
4) If you are using any additional spices, add them now. I used about a teaspoon of sea salt and about 1/4 black pepper.
5) When the beans are ready, drain and rinse them and add them to the pot. Pour in enough water to cover everything. Give it a stir and cover the pot.
6) Cook on high for at least four hours. Longer wont hurt it.
Serving Size: makes 8 servings, about two cups each including liquid
