Shrimp Fried Rice

Ingredients
Brown Rice, 4 cupsMixed Vegetables, frozen, 1 package (10 oz)Edamame, Shelled, Frozen, 1.5 cupSoy sauce, low sodium, .25 cupRice Vinegar, 3 tbsp Chili Paste, 1 tbsp Shrimp, cooked, ~35 largeSesame Oil, 5 tbsp
Directions
Cook Brown Rice, set aside. Preheat oven to 350 degrees. Toss vegetables & shelled edamame in 1-2 TBSP of Sesame Oil. Oven roast for 10-15 minutes or until tender. While the vegetables are cooking, mix soy sauce, rice vinegar and chili paste in small bowl and set aside. In large skillet, cook shrimp in remaining sesame oil. When done, combine vegetables, rice and sauce in the same skillet. Stir and heat until everything is warmed. Serve immediately.
