1/4 cup coconut oil, softened1/2 cup butter flavored shortening1/3 cup sugar1/4 cup brown sugar1 egg1 tbsp chocolate sundae syrup1 tsp salt1 teaspoon vanilla1 tsp chocolate extract (optional)1/2 cup all-purpose flour2/3 cup oat flour1/2 teaspoon baking soda2 packets hot chocolate mix1/4 cup semi-sweet chocolate chips1/3 cup mini marshmallows
Preheat oven to 350F and line 2 baking sheets with parchment.
In a bowl, cream coconut oil, shortening, and sugars.
Beat in the egg, syrup, salt, vanilla and chocolate extracts.
Beat in flours, baking soda and hot chocolate mix.
Fold in the chocolate chips and mini marshmallows.
Bake, one sheet at a time, for 12 minutes.
Cool completely on the baking sheet
