Low-cal Cinnamon Apple Cups

Ingredients
* Cottage Cheese, Nonfat, 16 oz (remove) * Egg substitute, liquid (Egg Beaters), 1 cup (remove) * Cinnamon, ground, 2 tbsp (remove) * Apples, fresh, 2 medium (2-3/4" dia) (approx 3 per l (remove)
Directions
Spray a 12-cup muffin pan with cooking spray and preheat oven to 325. In large bowl stir together cottage cheese, egg whites, cinnamon & chopped apples until blended. Fill cups up to the top with cottage cheese mixture. Bake in preheated oven for 35-40 mins or until done.
Before serving let cool to firm. Use butter kniw to go around the edges to life out the apple cups & serve.

    Very tasty and light. nice for a healthy breakfast or snack. I didn't have enough cottage cheese but used more eggwhites and added some oats. I would make it again and try some variations, like possibly blueberries or strawberries. - 4/1/08
