Chicken Fried Cauliflower

Cauliflower, raw, 1 head, medium (5-6" dia) Peas and carrots, frozen, 2 cup Garlic, 1 clove Soy sauce (tamari), 4 tbsp Scallions, raw, 3 small (3" long) 1 lb Ground Chicken Breast Scrambled Egg, 2 large Olive Oil, .5 tbsp
Add olive oil to pan on medium heat and brown the chicken, breaking up into small pieces.
Once browned, add garlic and 1 tbsp tamari and continue to cook thru.
Add the frozen veggies and green onion to the chicken mixture and stir until heated thru.
Add cauliflower "rice" to the pan and stir to mix everything together.
Add remaining Tamari and stir to mix in.
Push everything to the side and add 2 eggs to the pan, scrambling as it cooks.
Once the eggs are scramble, stir everything together.
Serving Size: Makes 6 servings
