Simple White Beans and Ham

2 cups white navy beans4 cups water1 tbl olive oil1 large onion chopped4 cloves garlic minced4 stalks celery chopped1 large carrot peeled and sliced1/2 ham steak cut into small cubed pieces2 TBl mustardcayenne pepper optionalblack pepper optional
Rince dry beans and check for stones.
Soak beans in large pot or slow cooker overnight,
In morning, saute onion in olive oil until clear.
Then add onion, celery, garlic,mustard, and carrot to pot. Bring to simmer then cook on high in slow cooker for four hours or on low for eight hous.
Serving Size: Makes 6 large servings of two cups each.
