Beef Goulash

Ingredients
2 lb. boneless beef chuck2 tbsp. bacon drippings (can subsititute with bacon fat)2 c. hot water2 beef bouillon cubes1/2 bay leaf1 clove garlic, minced3 med. onions, coarsely chopped1/2 green pepper, coarsely chopped2 tbsp. flour (can subsititute with soy flour)1 tsp. paprika3 tbsp. melted butterSalt and pepper to taste1 (6 oz.) can tomato paste4 med. potatoes, cubed
Directions
1. Cut the meat into 1 inch cubes. Brown in bacon drippings on medium-high heat.

2. Add to meat, bouillon cubes dissolved in 2 cups water, bay leaf, garlic, onions and green pepper.

3. Reduce heat to simmer, cover and simmer for 1 1/2 hours. Or until meat is tender.

4. Combine flour, paprika and melted butter. Stir until smooth. Add some liquid from goulash to make a smooth paste. Add to goulash stirring until well blended.

5. Salt and pepper to taste, add tomato paste.

6. Add potatoes. Cover and cook another 30 to 45 minutes or until potatoes are tender.

6-8 Servings of 1.5 cups.
