Orange Buttermilk Cake

Ingredients
*Flour, white, 2 cupGranulated Sugar, 1 cupSweet potato, cooked, baked in skin, without salt, .25 cupButtermilk, lowfat, .75 cupEgg, fresh, 2 largeBaking Powder, 2 tspRaisins, .25 cup, packedOrange Juice, .25 cup*Canola Oil, .50 cupWalnuts, .5 cup, chopped
Directions
Mix dry ingredients. Prepare bundt pan with oil and flour.
Beat oil, eggs, sugar, orange juice, buttermilk until mixed. Add flour, orange zest, nuts and raisins and mix to get a smooth batter. Bake at 350 for 45 to 50 minutes.
