Ingredients
6 cups shredded Beets1 cup Orange Juice1 cup Rice Flour4 large Eggs6 tablespoons Apricot preserves
Directions
Makes 12 servings.
Place 6 cups of shredded beets in a large bowl.
In a small bowl mix orange juice, rice flour, eggs, and preserves to combined. Fold liquid mixture into the beets. Spread beet mixture into 9" x 13" pan and bake at 350 degrees for 60 mins.
