Apple and Brown Sugar Baked French Toast

1 large apple, diced6 slices of bread, torn into 1" pieces1/4 cup light butter1/4 cup packed Splenda Brown Sugar Blend1 tbsp sugar free maple syrup1 cup Egg Beaters Original1 cup skim milk1 tbsp vanilla extract1 tsp cinnamon (optional)
Dice apple and tear bread into small pieces. In a small saucepan, melt butter with brown sugar and maple syrup over medium heat, stirring constantly, until smooth. Pour mixture into an 8x8 glass baking dish that has been sprayed with oil. Layer pieces of bread and apples on top of sugar mixture. In a medium bowl, whisk together skim milk, egg beaters, vanilla, and cinnamon. Pour over bread/apples. Cover dish and refrigerate at least 30 minutes. Place baking dish on 1" rack in NuWave and bake on HI for 30 minutes.
