Pelican Bay's Apple Bread Muffins

Ingredients

1 box Pelican Bay Apple Bread mix (comes in two bags)3 eggs1/3 cup Sour Cream or 1/3 cup Yogurt2 cups Apple Sauce3/4 cup Vegetable Oil
Preheat oven to 350 degrees
Butter and flower two 12 cup, or four 6 cup baking pans
Beat eggs, vegetable oil, sour cream or yogurt, and apple sauce together
Add both bags to Pelican Bay Apple Bread Mix to bowl and beat until well mixed.
Pour batter in to each cup of muffin trays, about 3/4 full
Bake for 45 minutes
(Depending on the pans you use, the cook time may be higher, up to 60 minutes)
Outside and tops should be a deep golden brown, center should be softer, fork or toothpick should come out clean
Serving Size: 1 muffin
