Italian Pork Cutlets Piazzolla

1 tbsp olive evoo1 large can of petitie diced tomatoes1 large purple onion sliced thin1/2 cup good red winesea salt and fresh ground pepper1 1/2 tsp herbs de provence4 - 3 oz lean pork loin cutlets
Heat large saute pan. Add cold oil, then add salt and peppered cutlets. Brown on high on both sides. Remove from pan and set aside. To hot pan, add onions, cook until soft, about 3-4 minutes. Add entire can of tomatoes and wine. Add herbs de provence. Cook covered for about 10 minutes until sauce thickens a bit. Stir sauce. Add pork cutlets back in and cook covered for about 10-15 more minutes. Sooooo good!
