Champagne Risotto

Ingredients
Large onion, choppedArborio Rice, 2 cupsButter, unsalted 100 gramsParmesan grated 100 gramsChampagne 5-8 oz
Directions
Melt half the butter and saute onions until golden. Add the rice and stir with the butter and onions for 3 min. Add half parmesan and stir.Start adding the wine, a cup at a time and stir until rice has absorbed it. Continue until all wine is used. Taste the rice and add a cup of hot water if still not done. Take pan off heat and add rest of butter in small chunks and the parmesan and stir quickly for 3 minutes to glaze the rice.
