Low Fat Creamy Baked Potato Soup

Ingredients
6 cups diced potatoes1 cup diced celery1 cup diced onions1 tsp butter1.5 cups of 1% milk2 cups of swanson chicken broth 99% fat free1 tsp salt2 tsp black pepper1 cup of colby/cheddar shredded low fat cheese
Directions
Place tsp of butter in a large kettle or dutch oven turn on med-high heat and add celery and onions. Let that cook for about five minutes. Next combine your potatoes, milk, chicken broth, salt and pepper. Cook on medium heat stirring occasionally, cook for about 20 minutes. If potatoes are fork soft then use a serving spoon and mash 3/4 of potatoes just to give the soup some texture. Finish off the soup with the cup of cheese and simmer on low for about five minutes.
