Cube Eggplant, chicken, onion,and tofuSlice mushroomsSlice thin strips carrots, red pepper, peapodschop garlic
Directions: About 2 minutes each
Add olive oil, chicken, garlic to a large pan, saute for a few minutes to slightly cook, then
Add eggplant, onions and carrots. Saute a few minutes,
Drain entire mixture Return to pan.
Then add oyster sauce and sesame oil, and bean sprouts.
Cover for a few minutes then serve. Makes approximately 3 (2 cup each) servings
