6 cups raw black-eyed peas, rinsed.5 cup onions, chopped.5 cup celery, chopped.5 cup bell pepper, chopped2 lb corned beef brisket, trimmed with seasoning packets2 capfuls Mrs. Dash Herb and Garlicpinch of cayenne or red pepper flakes2 tsp dried thyme2 tsp herbes de Provence
Toss all ingredients in a crockpot with 4 cups of water. Set on high for one hour and then leave on low for the remaining 7 hours. The longer it cooks, the more the brisket will shred. Serve alone or atop a sliced and roasted medium-sized potato.
