Turkey Breast with Veggies in the Crockpot

2 large celery stalks, diced10 small mushrooms, sliced3 medium carrots, sliced1/3 of a butternut squash, peeled and sliced (approximately 2 cups)1 cup low sodium chicken broth1 cup of water1/2 Turkey Breast, bone in, skin on4 T. unsalted butterapproximately 3 T. poultry seasoning
Layer veggies on the bottom of a 4-5 quart crock pot. Place turkey breast on top of veggies, pressing down, if necessary, to get it in. Pour the chicken broth and water into the crock pot. Slice the butter into 4 pieces and place under the skin and/or on top of the turkey breast. Sprinkle liberally with poultry seasoning. Place lid on crockpot.
Cook on high for 1-2 hours, then cook on low for another 2 hours, or until turkey is cooked through.
