Wisconsin Beer Cheese Soup

1 Medium onion, diced4 Stalks celery, diced2 Tbsp Butter1 Tbsp Olive OilCracked Pepper1-2 cloves fresh crushed garlic4 Potatoes, peeled and diced3 tsp chicken boullion1tsp worcheshire1 tsp dijon mustard1 can Budweiser or other beer1 cup cubed Velveeta1 cup shredded or cubed pepper jack cheese1 cup shredded sharp cheddar
Saute onions and celery in butter and olive oil until softened. Peel & cube potatoes, boil until softened. Reserve 2 c liquid, add chicken bouillion to this. Set cooked potatoes aside. To the onions, stir in flour. Season with pepper and fresh garlic. Add chicken stock, let simmer and thicken on Med-Low. Add 1 can of beer and 1-1/2 cups of milk, 1 tsp worcheshire, 1 tsp dijon mustard, along with the cheeses. Let simmer on Low until thickened and cheese is all melted. Add potatoes. Serve topped with bacon bits or popcorn.
