Slow Cooker Pork Chop Dinner

Ingredients
4 (4-ounce) boneless top loin pork chops1 tablespoon olive oil1 medium white or yellow onion, sliced (about 1 cup)2 cups sliced mushrooms, (about 8 ounces)1 tablespoon flour1 1/2 cups low-sodium chicken stock2 teaspoons no salt Italian seasoning blend1/4 teaspoon black pepper1 pound redskin potatoes, quartered (about 8 potatoes)4 cups fresh green beans, trimmed (about 12 ounces)
Directions
Place a large skillet over medium-high heat, then coat with cooking spray. Add the pork and cook two minutes per side.

Set the pork chops aside, then return the skillet to the heat. Add the oil, then the onions. Cook for three minutes, stirring occasionally.
Add the mushrooms and cook another two minutes, until the mushrooms are soft and starting to brown.
Stir in the flour and cook for one minute, then slowly pour in the stock.
Stir constantly for three minutes, until the sauce thickens. Add the seasoning blend and pepper, then turn off the heat.

Place the potatoes in the bottom of the slow cooker. Top with the pork, then the onion-mushroom mixture.

Cover and cook on low for five to six hours. About 15 minutes before you're ready to eat, add the green beans. Cook until tender.

Serve immediately.

    For everyone asking why cook everything first, searing the pork before putting it in the slow cooker helps to retain its moisture and flavor, sauteeing the onions would help to caramelize them. As for the mushrooms and green beans, I think they'd be fine without precooking them. - 9/6/14

    I'm just curious (not trying to nitpick) but wouldn't all your stuff be like, casserole formed in gravy? or is there not enough of the mixture to soak everything.
